Recipe - Stewed Bird's Nest with Fish Maw & Abalone

For making this dish, the following ingredients are needed:

75 grams of fish maw
225 grams of shin of pork
75 grams of abalone
6 cups hot stock
115 grams of bird's nest
Shaoxing wine
Salt

The fish maw should be soaked for a period of 24 to 36 hours, with the water being changed on every 12 hours. This will soften the fish maw, after which it should be washed and placed in a deep bowl where boiling water should be added. The bowl should be covered for 30 minutes and left to rinse. Then, a process of parboiling should be conducted using water with spring onion and ginger. After that, the maw should be chopped up, while a shin of pork is also parboiled and washed off. Abalone should be cooked in boiling water for around 10 minutes, then turned off and left covered for half an hour. At that point, the abalone should be removed, washed and rubbed with warm water.

The next step includes boiling water in which spring onion and ginger are cooked for a while. Shaoxing wine should be added, as well as abalone and then cooked for about 5 minutes. From that point, abalone should be removed, the hot stock added and left to stew on low heat for 60 minutes. After that, stock and abalone should be placed in the stewing pot. Shin of pork and fish maw should be added then, covered and left to stew for 3 hours until the abalone is soft to touch. Lastly, bird's nest should be added and cooked for 10 minutes. Seasoning with salt should come at the very end, according to taste.

This way, the best possible stewed bird's nest with fish maw and abalone can be served and enjoyed.
